The constant change and being able to work with my hands. Being a chef is very creative.
Where do you live? Why?
I live in Stockholm. I love the city and it makes it possible to run the restaurant.
Where is your favorite holiday spot in Scandinavia? Why?
I have a house which is located in the archipelago of Stockholm. The islands and the water give me inspiration and rest. The total quietness is unique.
Where is your favorite local restaurant? Why? What is the specialty dish there?
When I am not stuck in my own kitchen at Fredsgatan 12, my favorite restaurant is called Long Horn Steakhouse which is located in Stockholm. I often order a tender stake.
What do people do in your town/city for entertainment?
Like in most other big cities, we eat, drink, see a performance of some kind and participate in all sort of outdoor activities. Stockholm has a beautiful archipelago and often people go to any of the islands for entertainment, especially in the summer time.
Do you have a secret spot where you live which is like nowhere else in the world?
The place I love is actually located in Province, France. I go to a small village in Luberon Mountains where they produce fantastic wines. We have a few secrets spots there I wont share with you…
What is your favorite shop in your city/town?Why?
Fredells Hardware Store. I am into restoring our house.
What is your favorite Scandinavian purchase from the supermarket? How much is it why?
Bleak roe from Kalix or Artic Bramble (kind of a berry) Bleak roe is about 90euro/kg and Artic Bramble is about 40 euro/kg.
What do you think represents amazing value in Scandinavia? Anything from free entry into libraries through to hiking through to fresh herring for $x?
The most amazing value in Scandinavia are the things that are almost free. Lobster fishing in the end of September is a fantastic experience and the ferry rides through Stockholm’s archipelagos cost almost nothing.
If you were a billionaire where would you like to eat and stay in Scandinavia?
I would get my self a secluded cabin just outside Copenhagen, Denmark. I would cater food from all the good restaurants in Copenhagen and only invite my best friends to join in for the meals.
If you were the opposite where do you think represents amazing value?
All the good sushi places.
What does Scandinavia mean to you?
The Nordic light, green and the cold water.
How do you celebrate Christmas/other festivals in Scandinavia?
Christmas is the day to spend with your closest family. It is also a time for crazy gift shopping and long dinners. Midsummer is also a nice festival where you eat traditional Swedish food and loads of strawberries.
Do you have a favorite recipe that you can provide us?
Black currant leaf sorbet/lemonade:
- 200g lemon juice
- 400g glukos
- 400g sugar syrup
- 1000g water
- 200g blackcurrant leaf
- 1,5 sheets gelatine
Mix all the ingredients. You can either freeze the mix or serve it fresh with crushed ice. It is a great refreshing drink in the summer.
What do you think is the strangest thing about Scandinavia?
The Midnight sun, Sweden never goes dark.
